RASPBERRY PECAN BARS

INGREDIENTS
  • 2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup firmly packed light brown sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 cup butter softened
  • 1 cup red raspberry preserves
  • 1 cup pecan pieces

DIRECTIONS

In large mixing bowl, combine flour, oats, sugar, baking powder, salt and nutmeg. Using a pastry blender or two forks, cut butter into flour mixture until it resembles coarse crumbs.

Reserve 1½ cups crumb mixture. Press remaining mixture into bottom of a greased 13x9-inch baking dish. Spread with preserves. Stir pecans into reserved crumb mixture; sprinkle over preserves.

Bake in a preheated 375°F oven 28-32 minutes or until lightly browned. Cool completely.
